Working Principle
The HEXFP-ZL1700L operates through a five-stage programmable tumbling cycle. The machine consists of the SUS304 tilting drum with interchangeable paddles, hydraulic lifting support, water-ring vacuum system, glycol cooling circuit, and PLC electrical control system:
Loading: Raw meat is transferred into the drum via the mobile loading device or a 200 L meat trolley. Brine and dry ingredients are drawn in through the dedicated vacuum suction line, with an optional 500 L suction cart available for large meat blocks or low-moisture minced product.
Vacuum Draw-Down: The lid is closed and the water-ring vacuum pump evacuates the drum to the programmed level, down to -0.085 MPa. The inline vacuum filter and high-grade vacuum sensor maintain a stable, repeatable vacuum condition throughout the run.
Cooling Activation: The glycol circuit circulates coolant through the paddles or the drum jacket, depending on configuration. Drum-interior temperature is monitored continuously and shown on the touchscreen, holding product temperature within the set band for the whole cycle.
Programmed Tumbling: The drum rotates at the programmed 2–12 rpm speed. Operators run either a traditional cycle (forward tumble – pause – reverse tumble – pause) or a custom program of up to six process cycles, each with two independently configurable steps for time, speed, vacuum state, and rotation direction. Breathing mode alternates vacuum and atmospheric pressure to accelerate brine uptake.
Discharge: On program completion, vacuum is released and the hydraulic support tilts the drum to the discharge position. Reverse rotation moves product out through the opening, and the sloped geometry allows complete discharge and full drainage during washdown.
